Hi everyone!

Yes, I'm very excited about this new chapter in life. And Mike, I actually lost my Jungle certification a couple of months ago. My disney employment will officially end in June. But pretty much, my time there is done. Being married with kid is not condusive to flying to FL every six months - but as much as I love my Jungle Cruise, I love my family 10x as much! So it's definitely worth it.

Good morning, all.

How was your weekends? Ours was pretty good. On Saturday our church held the annual Fine Arts Competition (sectional level - those who advance go to district, then state, then national..).

I got to be a judge. I loved it. Finally I got to put my knowledge to use! There were great displays of talent, but my favorite was one that did not get passed (I didn't pass him, either). It was a rap solo, and a kid changed the lyrics to "Can't Touch This" to give a testimony story about leprosy. It started awesome, but the kid got nervous and forgot the words. He had to restart and use his lyrics. He got through it, but it wasn't enough, unfortunately.

It's me again. Getting so lonely in here.

Yesterday I picked cheesecakelette up from school and she asked if she can go to the grocery store. (She usually dislikes this task so I try to do my shopping before picking her up, but I didn't have time yesterday). I knew something was up, and she said that her class is having a valentine's party on friday, and we're in charge of bringing a cake. Well, she volunteered me because she really likes my cakes. lol.

So, I made a cake last night for class tonight, and tomorrow I'll be baking another cake for Friday's party...and next week I'm making a Hulk cake for a friend's son's bday party. Fortunately, I don't have to make a cake for class next week.

That's a lot of cake!!

Great news FB on the decision to be a SAHM. It is great to be able to follow your hearts desire.

I am a SAHH. (Stay At Home Husband) and I am busier than when I had a job.

Ha...maybe not just yet. Last night's cake was a disaster, but since it's for fondant class the teacher won't care as long as it's shaped like a cake.

I'm still ironing out the kinks in this baking stuff....but I'm welcoming the practice right now.

AhHa, there's your problem FB. You do not iron cakes, the oven really is the way to go .

I think it is very cool that you are doing this and enjoying it so much.

I also think it's cool that Gary is enjoying being a SAHH and that you will soon be enjoying being a SAHM! Life is good, hmm?

Thanks guys. We have moved into our new place, well not completely. We sleep and eat here, have a temporary sat TV connection (cables run from the old place). But we don't have all our clothes over here yet. And we are waiting for our new washer and dryer to be delivered.

But we have the family here for a Super Bowl party.

That's how I made mine...oh they were sooooo good. I'll have to post a link to the recipe so we can compare.

Ray, yep, I've seen that show a few times. I like the Food Network Challenge cake shows, better. Lots more drama. lol.

The recipe I have has a "white" sauce instead of red enchilada sauce. I'd have to look at it after I get home tonight to be able to compare it, I don't remember all that is in them.

HERE is the link the recipe I used. It, too is a "white sauce". It's pretty simple, but went over well with the family. :)

Very close to the same one FB! I usually put rinsed and drained black beans in mine (inside the enchilada) and add a can of Cr. of Mushroom soup to the Cr. of Chicken soup and sour cream - it makes more sauce and I like the combination of the two soups.

They are very yummy.

Ooooh black beans....that sounds awesome.

We're not so much cream of mushroom fans but I'll have to see if Ed will take black beans :)

Well I just finished my cake disaster for class tonight. It was one of those that was doomed from the start...and a long story short I've got a frosted cake at least three inches high (which is what I need for class tonight). Albeit, it's lopsided and lumpy and held together by frosting and prayer alone....but it's complete....

Well, I made it through cake class last night. Barely. It just wasn't my night. I didn't have all of the supplies I needed (Seriously my arms are loaded coming in with a cake, a toolbox, and another big bag). But fortunately my classmates rescued me. Then I didn't realize that I was to put the cake on a cake board, and not directly on the fondant board like I did. *sigh* In the end, it looked better than it started, and I'll post some pics on fb tonight.

I'm really tired this morning, and it started snowing. I'd love to go home and curl up to a nap...
